This weekend was amazing. Wine and Crab Week in the Mendocino area was absolutely everything I had wanted it to be and then, today happened. I came home to a bridge toll ticket that was due last week, the registration for my classes (that start next week) had somehow disappeared into cyber space and I felt like screaming, or crying, or both. So, I called my dad (like a big 26 year old baby would do) and expected him to fix everything and he simply said, “Kelsey, this is a bump in the road. You will be fine.” I wanted to scream and cry all over again but realized he was right.
Of course I will have to spend extra money on the ticket and I will have to take extra time tomorrow to figure out this class schedule, but in reality, it will be forgotten by next week. I should never let a little bump in the road ruin an amazing weekend with great friends, or anything for that matter.
Here are few more things from this weekend that are definitely making me happy:
2. The road to my favorite beach.
3. One of the most epic bands I have ever seen; Church Marching Band.
4. An old logging road.
5. A tasty meal paired with a heavenly glass of Roederer Estate Wine.
6. A perfect (very cold) beach day.

Croutons are my favorite part of any salad. I always order extra at any restaurant and when I am at home, I put so many on a salad that it is no longer considered “healthy.” So, when Zachary brought home extra bread from the winery he works at, I knew exactly what would happen – homemade croutons. They are super easy to make but I do have to warn you to watch them carefully… Just a minute extra will burn them to a crisp (quite literally).
Bread (I have no idea what I used but I think it was sourdough)
1/4 cup olive oil
1/4 cup parmesan cheese
First, set the oven to 375 degrees.
I put the bread, olive oil and cheese in a big bowl. Mix it all up so that the bread is fully coated.
Put the coated bread cubes onto a baking pan and sprinkle with oregano and garlic powder. Then, bake for about 8 minutes. I took them out and moved them around with a spatula and then placed it back in the over for about 7 more minutes. But depending on your oven, it could be a few minutes more or less.

For Christmas I received a gift card to J. Crew and was pretty ecstatic about it. The only problem is I want almost everything and I have an extreme fear of spending a gift card on the wrong item. I also want to get the most bang for my buck so I tend to stick to the factory store (which just so happens to have amazing sales almost everytime I visit the site) and can spend hours trying to pick out which piece I actually want. I have narrowed it down and hopefully will decide by the end of the week:

I love, love, love the classic look of plaid and pearls. I have seen it done over-and-over again and it never gets tired. This outfit is definitely going to be my new go-to and it is perfect for cold mornings, chilly afternoons and/or a night out.

This past week was filled with an impromptu celebration (congratulating close friends getting engaged), good times with the girls, my long to-do list being cut in half, and of course some wine. It was busy and enjoyable. This next week will be spent getting ready for a friends bridal shower and crab week, woo!
A few things that are currently making me happy:
2. I’m finally cutting my hair after about six months (partially because I have been too lazy and partially because I’m a little scared). I’m hoping this will be the end result.
3. The best kitchen towel I have ever seen (and it just so happened that my dear old dad picked it up for me).
5. Zachary and I discovering the best dessert is located just a bike ride away. Score.

2012 was a bit of a rough year personally. Nothing traumatic happened but I was constantly “down” and I couldn’t seem to get out of the “funk” I was in. 2013 is going to be different – I am going to be happy. It seems like it would be easy… But then why was it so hard for me last year? So, to start this year off with a bang, I did a bit of research and many people said the same thing:
“Fake it until you feel it.”
I know that sounds cheesy but it already seems to be working. I am starting to believe that thinking happy – will make you happy. Anytime I get peeved or in a funk, I will smile and think good thoughts and fake it until I forget it. I also believe that focusing on things that make me happy instead of dwelling on things that annoy me, should steer my emotions in the right direction. So… My conclusion is that on Mondays (since it’s Monday) I will post about things/pictures/ideas that are currently putting me in a better mood. I hope you enjoy!
